Tofu

Tofu is also known as bean curd. It's curdled soymilk solids that are pressed into cakes. The soybeans are soaked overnight, ground into a puree, boiled and filtered to produce a milky liquid.A coagulant is added to allow the semi-solid cake nature to develop.

There is silken tofu, with the smoothest texture; kinds that are custard-like, firm, extra firm, regular and other forms available. It can be used as a substitute for cream in soups and baked goods, and can be used in steamed, simmered, baked and broiled dishes.

It's essentially quite nutritious, but the texture might discourage some people from using it.
