Episode 3: "What's most important in life is not what you eat, but where you eat"

Rokuro reveals to Sengoku that he has virtually no confidence in his ability to be the owner of the restaurant. Rokuro talks to the employees but he doesn't really manage to make a very good (or even sensible) speech.

Rokuro had been trained in accounting and looks over the restaurant's books. He says that, due to the fact they are running in the red, they will need to get rid of one or more employees, so each employee is interviewed. This obviously upsets the workers.

Rokuro, though, is able to figure out various ways they can save money here and there, so it turns out no one will have to be fired after all.
